Ingredients :
3 tbsp cooking oil
4 cloves garlic, crushed
1 pc onion, cubed into very small pcs
3 pcs tomatoes, sliced
2 pcs medium-sized potatoes, sliced into small-sized cubes (1 in. x 1 in.)
2 pcs medium-sized carrots, cubed like the potatoes
¾ k pork (mixed fat & meat – but more meat – 70%), cubed – same size as
the potatoes & carrots
¼ k pork liver (optional) – cubed like all the rest
5 regular sized hotdogs, sliced diagonally into small pcs
½ cup tomato sauce (I use Del Monte)
¼ cup vinegar OR squeezed kalamansi juice (around 7-9 pcs) – (kalamansi is better)
¼ cup soy sauce
3 cups water
1 tbsp patis
6 pcs whole kernels of black pepper
black pepper powder
3 pcs dried laurel leaves
1 tsp salt
1 tsp sugar
(Serves 4-5 persons)

- Mix pork, liver, water, vinegar/kalamansi, soy sauce, pepper (whole kernels), laurel leaves & boil till pork & liver are tender. Replenish water when it subsides while pork & liver are not yet tender. Don’t let it become dry – make sure enough sauce is left till cooked. Set aside.
- On another cooking pan or casserole, fry the potatoes in cooking oil. Cook till slightly brown. Remove from pan, set aside. Then fry the carrots and also set aside when cooked. Next fry the hotdogs & set aside when cooked. Note : just add cooking oil as needed.
- Fry the garlic until brownish.
- Add the onion … then tomatoes. Cook till soft.
- Get the boiled pork & liver & add to the sauté. (Note : don’t throw the sauce of boiled meat. You will use it later). Stir & mix while cooking. Add patis & continue to sauté. Add the bell pepper.
- Pour tomato sauce & let it boil for a few minutes.
- Add the sauce of the boiled meat (including the pepper kernels & laurel leaves) & wait till it boils. (Note : if sauce seems too few just add a little amount of water. If it is too much just don’t pour all)
- Add the seasonings… salt, black pepper powder, sugar. Taste & add whichever of the seasonings are still needed. (It could taste a little sour because of the tomato sauce & vinegar/kalamansi.. You can neutralize this by adding a little more sugar. Also, since I don't use MSG or vetsin, sugar is the best substitute for adding to a more pleasant/delicious flavor.)
- Add the fried potatoes, carrots and hotdogs. Boil for a few more minutes. Then remove from fire.
